Gabby Gravois


Gabby has been selected as our February Member of the Month! Please join us as we Congratulate her!
For those of you that are not yet privileged to personally know this beautiful, smart, creative young lady, she is quite amazing. Gabby does not let her being a 'zebra’ get in the way of her living quite an interesting life in the New Orleans area. She is a role model for each of us on how to live our lives,
accomplishing our tasks and dreams, without letting EDS control our lives.  Gabby is very creative, enjoys drawing and writing. Even though her EDS affects her hands, she still finds solutions to complete whatever project she is working on, and she has many. Not only is Gabby artistic and creative, but she also loves to learn!  
Gabby is a scientist as well as an artist. She is focused on soil studies (Pedology is the study of soil in its natural setting. Edaphology studies soil in relevance to its uses. Each branch applies a mix of soil chemistry, soil biology and soil physics.) In addition to her studying soil, our little scientist also studies  Entomology. Entomology is the study of insects and their relationship to humans, the environment, and other organisms.

 

She is currently conducting some independent research on mealworms and their ability to break down certain types of plastic. Her next step will be using fungi to capture the residual chemicals in the frass (insect feces). She is doing this in her work toward helping solve our current pollution issue, and also helping to “Heal Our Planet”. Before Gabby changed majors to studying soil and insects to help save our planet, she was studying Culinology. Culinologists work in diverse aspects of food—from experimental chefs and menu planners to food manufacturing to fine dining. Gabby was focusing on a specific type called Pâtisserie. Pâtisserie is a type of Italian, French or Belgian bakery that specializes in pastries and sweets, as well as a term for these types of food. She was also studying to be a garde manger and the art of butchery. A garde manger is a cool, well-ventilated area where cold dishes are prepared and other foods are stored under refrigeration. The person in charge of this area is known as the chef garde manger or pantry chef. Butchery, as most people know, is the work of slaughtering animals and
preparing them for sale as meat. So, I’m pretty accurate when I say our own “Dear Gabby”,
is one smart, and unique “cookie”, working to help “Heal Our Planet” through the study of
‘dirt and worm poop’ to aid in the fight against pollution of our planet.


I hope you find Gabby’s life and her choice of studies as unique, beautiful and as humble as her personality. Just as we all know that each zebra is unique in the fact that no two zebras share the same stripes, and TOGETHER WE ARE STRONGER. We, at EDS Louisiana, Inc., feel truly blessed to have Gabby be a valuable part of us, working on our team, helping us to make a difference!
